RECOMMENDED PRODUCTS FOR HANDLING AND PRESERVATION MEAT AND FISH

The foodservice industry, just like the rest of the food industry, must apply food safety management systems that adhere to the principles of Hazard Analysis and Critical Control Points (HACCP) to manage the hazards that can affect food safety and to avoid food contamination. For this purpose following the General Food Hygiene Principles established by the Codex Alimentarius(1) is recommended, which includes implementing good hygiene programmes, cleanliness and sanitizing practices, delimiting food preparation areas, control of suppliers, storage, distribution and transport.
